Description: A conversation around Wakelyn's YQ population wheat, created by Prof. Martin Wolfe and used by baker Kim Bell. Filmed in 2017 the day before the UK Grain Lab's first symposium in Nottingham at the Small Food Bakery. YQ wheat is now used by several bakers and is gaining recognition from farmers for its resilience in the field and from consumers for its quality in baked produce.
